So here is the recipe for Vegan Indian Berry Pulao which is my simple veganised version of this classic dish
For the rice:
1 cup long basmati rice
a few strands of saffron
1/2 tsp oil
For the vegetable base :
3 cups mixed chopped veggies (carrots, cauliflower, beans, peas)
1 cup tomato puree
2 tsp chopped coriander
1 and 1/2 tsp ginger and garlic paste
1 tsp turmeric powder
1 tsp chilli powder
1 tsp coriander powder
1 tsp garam masala powder
1 tsp chat masala
1/2 tsp salt
1 tsp jaggery powder
1/4th cup water
For top layers :
1/4 th cup chopped coriander
2 onions (sliced and fried)
a few cashew or pistachios
a handful of dried cranberries
Rice : Soak the basmati rice in water for atleast 30 minutes.
Take a pot and add 2 cups water. Bring it to boil. Add a few saffron sprigsand oil to this water.
Put the drained soaked rice in this boiling water and allow to cook for a bour 7 to 8 minutes till itis3/4th cooked. Drain out any excess water.
For the vegetable base : Take a large pot and add oil in it. To this oil, add some fresh chopped coriander, add 1 and 1/2 tsp ginger garlic paste, add 2 to 3 cups chopped mixed veggies( carrots, cauliflower, beans, peas), add 1 tsp turmeric powder. 1 tsp red chilli powder, 1 tsp coriander powder, 1 tsp garam masala and 1 tsp chaat masala.
Mix everything properly.
Add 1 cup tomato puree, some water, add 1/2 tsp salt, 1 tsp jaggery powder.
Cover and cook for about 5 to 7 minutes.
After veggies are cooked layer on top with 3/4 th cooked basmati rice (cooked with some saffron)
Add layer of fresh chopped coriander, some cashews or pistachios, fried sliced onions and top generously with dried cranberries.
Cover and cook for another 5 minutes.
