1 cup long basmati rice
a few strands of saffron
1/2 tsp oil
Rice : Soak the basmati rice in water for atleast 30 minutes.
Take a pot and add 2 cups water. Bring it to boil. Add the bay leaves, cinnamon sticks, cloves, few saffron sprigs and oil to this water.
Put the drained soaked rice in this boiling water and allow to cook for a bour 7 to 8 minutes till itis3/4th cooked. Drain out any excess water.
For Top layers :
2 onions, sliced and sauted in some oil till they become pinkish
2 potatoes, sliced and cooked as French fries
1/2 cup fresh coriander leaves
2 tsp fresh mint leaves
juice of 1 lemon
a few sautéed cashews
Assembly of the Biryani :
First take a thick bottom flattish vessel and add the potato fries at the bottom, then add a layer of half of the rice on top, add half on fried onions, potatoes, mint leaves.
Then add a thick layer of Vegan Chana Masala and rest of the rice on top. Add the remaining onions, potatoes, mint leaves and cashew on top. Closed the lid and cook on slow flame for about 10 to 15 minutes.
Serve with some Vegan Curd or Vegan Raita or enjoy as is…
